Guaiacol is a phenolic natural product first isolated from Guaiacum sp. It is also found in essential oils from celery seeds, tobacco leaves, orange leaves, and lemon peels. It tends to undergo autoxidation in the presence of molecular oxygen and light. It is commonly used as an antiseptic agent, and a synthetic precursor of various flavorants, such as vanillin and eugenol.
