Astaxanthin is a xanthophyll carotenoid found in a wide variety of living organisms including microalgae, yeast, salmon, trout, crayfish and crustaceans. Astaxanthin is a naturally occurring orange-red pigment and a potent antioxidant. Astaxanthin has been reported to have potent biological activities such as antioxidant, anti-diabetic, anti-inflammatory, immunomodulatory and anticancer activities.
